Brownie Muffins

(makes 12)

1 cup fresh brewed coffee, cooled
2 Tbsp. sugar beet molasses
1 Tbsp. ground flax seeds
1 tsp. canola oil
2 tsp. vanilla
3/4 cup sugar
2/3 whole wheat pastry flour
1/3 cup unsweetened cocoa powder
1 tsp. baking powder
1/4 tsp. salt
1/4 cup bittersweet chocolate chips

160°C, 15-17 min.

1. combine coffee, molasses and flax seeds in a blender; blend until relatively smooth
2. mix with sugar, oil and vanilla
3. sift in flour, cocoa powder, baking powder and salt; mix well
5. add chocolate chips
4. bake for 15-17 minutes at 160°C
