Tofu Tortellini with Spinach, Broccoli & Zucchini and Nutmeg Sauce

Another perfect example for my I-don't-really-know-what-I'm-cooking-here-until-when-it's-done / random-throwing-together-of-appealing-ingredients-found cooking.

I cooked up a recent purchase: multi-colored tortellini with a tofu filling. They were nice, but the filling was a little bland.

Then I checked the freezer and settled on a cup of spinach and six broccoli florets although the brussels sprouts were quite appealing, too. Then I cut half a zucchini and put it all into a pot. Seasoned it with nutmeg, onion & garlic powder (can you tell I was being lazy? =p), salt and pepper and decided that I needed a sauce to go with it. So I quickly remembered the cream cheese in my fridge and veganized a quick unfancy version of the sauce I usually used to eat my tortellinis with.
One Tbsp. of cream cheese mixed with a little less than 1/4 cup soy milk. Seasoned with lots of nutmeg and oregano, some salt and pepper et voilá!

I have some blueberries in my fridge slowly starting their way torwards death so I'm thinking Oat Squares (Veggie Girl raved about them), scones (I've wanted to make them ever since la mistress mexicana Jennifer gave me the recipe) or good old-fashioned muffins like Alice made a few days ago! Mhh, so many things to choose from.

This blog world is just too full of inspirational people with amazing skills!
Not that it's a bad thing, ha ha! It just makes it so damn hard to decide =p

Ah you have no idea how jealous I am that you are able to eat vegan tortellini!! Everything I find at the store has egg in it (and cheese,ewww)!! Gosh that sauce just looks so delicious. You are making me drool!

I'm with you, the blogging world is where I get so much inspiration. I love the community, it's so enriching. I don't know if I could live without it. =)

I've tried those tortellini and agree, they're rather on the bland side of life... But I think you brought them to the tasty side!

Which soy cream cheese did you buy? I've seen provamel and soyatoo, but I've only tried the latter, I was wondering how the other one tastes...

I totally agree with your last two sentences! Every time I check out a different blog, it seems I have to put down another recipe to try on my ever-growing list. Now your cream cheese sauce has been added to my list. Too bad I can’t find vegan tortellini over here, but I guess it’s ok, since you didn’t think they were too great anyways.

oh my gosh i totally agree! i feel like there aren't enough meals in the day for me to re-create all the yummy things i see on blogs. i guess too much is better than not enough though. people are just so gosh darn created and talented! including yourself :) that dish looks wonderful to me (even if you weren't pelased with the taste) i'm such a visual person!

Jennifer - Thank you! I cook like this quite often, but get rather annoyed when I can't chose which ingredients to use, like this time. I stood around in my kitchen checking out ther cupcoards from afar to see what I might like to use and I was sooo hungry already =p

in dem von provamel ist meersalz und algen drin... also schmeckt schon eher herb (schade, wollte den eigentlich nehmen um endlich mal nen cheesecake zu backen).

I'm very spontanious when it comes to cooking anyway. For example I make a plan what to cook each day and totally don't feel like having it when the day has come so I pretty much improvise most of the time.

Aww, like I told Romina I'd be more than happy to send you vegan tortellinis in the mail (maybe for tofutti better than cream cheese, ww tortillas and a vegan pie crust in return... jk, they're just sadly not available here, boo), because the last ones I had, the spinach ones were really really good!

Ich muss sagen, der von provamel sah schon besser aus, der andere hat sich nicht wirklich gelohnt, auch wenn es nicht unbedingt schlecht war...

So many people have been telling me that I need to try golden kiwis… but I can’t seem to find them anywhere. Definitely, if I ever see one, I’m snatching it right up. You remind me that I actually haven’t had kiwi in quite a while. One of my most recent “new food” discoveries was fresh apricots, so I’ve been a bit obsessed with them at the moment!

haha you could make quite a business out of shipping vegan tortellini to those of us who are deprived in the US!

Lindsay - Oh no, you are? I'm sitting here going "aww noo that's so unfair" ! Everyone should be able to eat broccoli.

But hey, to be honest I've never realized your recipes didn't contain broccoli, because their mind blowing nevertheless. You have wonderful combinations and I really have to try your pesto sauce soon. the silken tofu is anxiously waiting in my fridge to get used.

Katie - I discovered them one day, fell in love and when I went back to the same store they didn't have any. I couldn't find them anywhere for at least a year so I was super excited when I found them in a store near work =)

I should try fressh apricots again, too. I think the last one I've had was wayyyy back (I was maybe 5 or so?) so it's about time!

I'm sure the sauce would've tasted even better if I had a cream cheese like tofutti, something more creamy than the crumbly soy stuff they sell here.
