The Plan, Raspberry Oatmeal, Chocolate Temptation Challenge and finally... Mozzarella!

The plan:

Three days each week I will consume vegetables only. Every dish I eat will have to consist of vegetables. As in soups, stir-fries, roasted veggies, mashed veggies... anything really. As long as it's vegetables only! No bread, pasta, rice, whatever.
That way I hope to try out more veggies I have never had yet. And to be honest, I love all-veggie meals!

I will starting next week, because I plan on making pizza, lasagna and black bean burgers this weekend. After that it's veggies-only time!

And the reason why I'm so eager to make pizza and lasagna this weekend is that last night I finally found vegan cheese!!!
You guys can't imagine how excited I was! Now I can have pizza and Lasagna with 'cheese'!

Besides having this veggie idea and drooling over my Mozzarella find I craved oatmeal last night.
Remember: never judge an oatmeal by its color!

It was delicious, but I have to admit that it didn't look very appealing.
I used the same recipe as in this one, used 2/3 cups raspberries, maple syrup instead of brown sugar & agave syrup, didn't put in any nutmeg and topped it with cashews.

The fair trade chocolate I bought last night for Cookie Mouses Chocolate Temptation Challenge! I decided to buy an Espresso chocolate. Can't wait for Easter Sunday now ;)

Good luck with your challenge! I love veggies too, but I love grains also. But at least you've got vegan cheese to top it all off!! Hope it's yummy.

Pink oatmeal? I can dig on that. Raspberries are one of my favorite fruits, I will definitely have to give them a try in oatmeal, thanks for the idea.

Romina - I just visited wikipedia and found out that quinoa counts as a vegetable. Didn't know that before and I don't know if it's true, but in case I get tired of all-veggie dishes I can always add some quinoa =)

Thanks! I've been looking at it quite often today, but not touched it yet, ha ha!

Jennifer - I'm hoping that I'll come up with dishes other people might like, too. I'm never too fancy with my recipes. I always keep it very simple and use basics like onions, garlic, salt, pepper, rosemary, thyme, nutmeg, oregano, basil... maybe this is a great opportunity to try out new spices =)

I promised myself not to touch it until at least 24 hours have passed, ha ha!

I think I'm looking the most forward to use the cheese on lasagna!! Damn it, why do I have a meeting with an old friend later? I should call him "I know we haven't seen each other since 2000, but I'm gonna have to cancel... I'd much rather stay at home and cook!" =p Okay nope, not gonna happen.

I don't think I could do veggies-only all day. I need my grains, proteins, and snacks. Now if peanut butter were a vegetable...

Ohh peanut butter <3 I snacked on almost half a jar last night =p Just too good!
We'll see how well I'm going to stick to it, but at the moment I'm quite positive!

Eventually I want to eat raw many times a week, but raw means fresh produce and fresh produce means lots of money out the door! I suppose that's gonna happen anyway when I get my juicer.

I love vegan mozzarella on my pizza. It doesn't melt quite right, but it's still soooo tasty. =)

I love veggie meals! If beans count as a veggie (I would count them, but are they really?!) then most of my meals are just veggies...and so good! I can't wait to see what you end up making!

Oh you will LOVE your juicer! My dad got my mom one for christmas a few years back. There's nothing better than fresh juice!

I haven't tried it yet, but will do tonight! I'm so excited over vegan cheese I almost feel a bit stupid, ha ha!

Courtney - Beans count as veggies, just like lentils. I'm already planning and browsing through a gazillion blogs and there are so many recipes I want to try I might have to change my plan to 7-VEG-days-a-week, ha ha!

hahah I love peanut butter...I eat it with a spoon NOT with bread bcoz bread "DILUTES" the peanut butter taste...OHHH... PEEEEANNNUTT BUTTERRRR....

Hrmm.. I think I'll look for quinoa in the supermarket - it looks like cracked wheat, is it?!

Awesome =D Can't wait to see what you're gonna come up with, I'm convinced that you will inspire me to no end! And you're a bunch of veggies ahead of me (think acorn squash, butternut...) ha ha.

Ohh btw, my mom got hooked up on quinoa, ha ha. I bought her a pack a few days ago because she kept telling me how she kept gushing over the salad and the quinoa in particular at work, asking her colleagues if they knew it =p

A small word of advice about wikipedia. Good chance most of that stuff on there is NOT true. We actually weren't allowed to use it at all in college for anything because ANYONE can go in and edit what you see! It could be a 12 year old claiming quinoa is a vegetable (which I looked up and its actually an ancient grain...not a vegetable at all!!!). Just to be SURE when you research stuff, you should go to a website with the last part .edu, .org or .gov. Just telling you this because I have had many bad experiences with wikipedia (using it in a term paper and getting all my info completely and totally WRONG). Now I won't use it at all!!!

The vegetable challenge sounds so intriguing though! What do you plan to eat for breakfast??

And I'm so excited to see your lasagne with the new "cheese"! I still haven't found a kind I'm crazy about yet!

ps-How is your Engish so good and you have never left Germany?! I would have def. mistaken you for a young, American woman!! :)

where where where did you buy this mozarellART???? I've said good by to cheese but if there was a decent vegan option that would be lovely. I've tried a couple of vegan cheeses I found in Reformhäusern but they were all crap.

and the chocolate you have there - I love it, it is one of my favorites :-)

Jenna - Thanks a lot for correcting that! And thanks for reminding me again that Wikipedia is not a reliable source (sort of the same thing happened to me back in school).

I thought a lot about breakfast and had no idea at all, but then I remembered that I hardly ever have breakfast. But in case something should come to my mind I'll try it. But seriously, I could not think of one all veggie breakfast food...

Ha ha, thank you! I spent 4 weeks in Canada (we have family there), but I think my English improved because of the internet since almsot all the pages I visit are in English.

Happy Herbivore - I would love to have more raw days, but for now I'll stick with veggies first. If the dish happens to be raw, even better ;)
30 days just veggies... sounds intriguing!

Anke - I bought it at Bio Company. I don't know where you live, but maybe they have a store near you too.
I have to admit that I didn't try the cheese yet. I haven't been in a mood for cheese the last days(crazy come to think of the fact that I was looking for vegan cheese all the time and finally found one). I'll let you know how I liked it!
