Oatmeal-Carob Pudding for Dinner

I am so full! This is the first time I had oatmeal pudding and it is so filling, I couldn't even finish the whole bowl. I tried, because it's yumm. But I just couldn't swallow any more, I look like 4 months pregnant already =p

I made Ruby Red Vegans Oatmeal-Carob Pudding. I got to use the carob powder I bought a few weeks ago for the first time, yay! Although when I opened the box I was like "Puh...", because it smelled exactly like the stuff my sister used to feed her bunny back when we were kids. But it tasted nothing like it smelled, I really like it.

I topped it with 1/2 mashed banana (+ 1 tsp. agave syrup) and sliced the other half along with a strawberry.

What I learned? That oatmeal probably really is the perfect breakfast, because it's filling, it's healthy and one can add nuts, seeds or fruit to make it even healthier.

I've really got to try this. I was intrigued when I saw it on Ruby's blog but I have to admit, I was a little wary. I never thought to add anything chocolatey or carob-y to oatmeal. I should really get to it, though!

I had that problem awhile back when I made oatmeal. It had been so long since I had had it, I forgot how filling it was and made Brett and I huge bowls. Needless to say, we barely got halfway through, we both ended up uncomfortably full, but it was GOOD!

What did you think of carob? I've had it, oh probably only twice to be honest with you, and I wasn't too sent by it. But this was a few years ago, and my tastes have definitely change, so perhaps I should try it again.

I just have this image in my head now of a super stuffed vegan, rolling her way to the couch in pleasant agony from being so full. :-)

And those strawberries, those strawberries. I miss them so bad in the winter. What we can get here in the US at this time of year is NOT what a strawberry should taste like.

Breakfast is so much fun to have for dinner. I honestly wish I could eat breakfast food all day! Then I could eat all the things I want to eat.

That pudding looks fantastic. Your pictures really bring out the nature of the food. I can't wait to try this.

Mmmm I just tried Ruby Red's version the other day and loved it! Yay for carob! Send your leftovers to me hehe. I will be happy to finish them for you :o)

Ashasarala - The carob powder gave it all just a hint of chocolate flavor, nothing overpowering.

Jennifer - Ha ha yeah, half of the recipe would have been sufficient =p

I actually expected it to be a bit more chocolate-y, but I guess it is good for using it in oatmeal, cookies, cakes and such.
Breakfast for dinner is awesome! The only problem was that I craved a hearty dinner after I ate it, but no way was there any room left for that =p

I usually don't like buying fruit at this time of the year, but every now and then when I really crave it I make an exception & these were quite tasty for February strawberries.

Romina - Oh god, me too! Pancakes, Waffles... I wish I had a personal chef who would bring me breakfast to bed every morning and follow me around all day, always having breakfast food to offer, ha ha!

Every single time I eat fruit I am always amazed that something in its most natural form tastes THAT good =p

Katie - I can't wait to try more oatmeal variations! I can't believe I have waited so long to try it.
I totally would, along with some granola, he he! Why is Texas so far away? Hmph!

NO, send your leftovers to me! I have no problem downing a bowl of oatmeal carob pudding. :) I'm so glad you tried it - that makes me smile. :D Adding strawberry and banana sounds HEAVENLY. Wow. Too bad I never get strawberries this time of year. Maybe summertime will be the time for some strawberry-banana oatmeal. And yes, carob powder smells disgusting - and tastes disgusting in certain recipes, or if not enough sugar is added to it. Oh goodness, I am just loving all your pink oatmeal pictures!

Ruby - Sadly this was the only strawberry I ate. The next day all of them had gone bad. Ah well, it's just not strawberry time yet. But the combination was wonderful!

If a cookie recipe calls for cocoa powder, can I substitute it with the equal amount of carob powder?

Cookiemouse - When I first got my camera I took about 200 macro shots of strawberries, ha ha!

Happy Herbivore, guess what I plan on making for dinner as soon as I have blueberries? That's right, your blueberry quinoa hot cereal! I am so looking forward to this =)
