Apple Cinnamon Almond Oatmeal

Ingredients
1/2 cup oats
1 cup soy milk
1 heaped tsp. brown sugar
1-2 Tbsp. agave syrup
1 tsp. cinnamon
1/4 tsp. nutmeg
1 apple, chopped
1-2 tsp. sliced almonds
1. put all the ingredients in a saucepan (cut 3/4 of the apple in small chunks, keep 1/4 of the apple & almonds for decorating)
2. bring to a boil, turn the heat to low and under stirring let simmer for 5-10 minutes
3. sprinkle with sliced almonds and apple slices
I will try Veganomicons Black Bean Quinoa Mango salad later, I can't wait!!!

Mmm!! That looks soooo good. It sounds like the perfect breakfast on Christmas. =) Or any day for that matter!
Anything remeniscent of Christmas morning sounds good in my book, because Christmas is such a great day ;o). And you can't go wrong with oatmeal-- I'm copying this recipe down too!

You finally made oatmeal!!!! It sounds so good. I think I'm going to go make a bowl right now - thanks for the idea. Though unfortunately not your wonderful sounding oatmeal as I don't have apples or almonds on hand. That actually makes me pretty sad your oatmeal sounds really good.

I'm sure any other fruit/nut would fit here, but the combination of cinnamon and apples is just something that always reminds me of christmas!

Mmm... This looks really good. I was just thinking about how I needed a good oatmeal recipe. I always end up eating the instant crap because homemade oatmeal often tastes flavourless. Then I realized that's because I never use any real recipes! I'm copying this now. :)

Whoa... I am totally not kidding when I say that I had the EXACT same thing for breakfast this morning, except I used maple syrup instead of brown sugar. So delicious & filling! I love starting my day with sweet, spicy oatmeal!! Great minds think alike. :)

I'm running low on brown sugar so I think I might give maple syrup a try the next time.
