What a perfect lunch! I had craved this for aout a week now and finally made it: pasta shells filled with VwaV's Tofu Basil Ricotta with chunky beets and borscht.
This time I pureed some beets to make it a little thicker.
Yummm!

This looks so yummy. My Mom loves beets - I must try it. Do you think it would work as well with golden beets? Thats the new veg I found at WHole Foods.

Nikki - I have never seen or tried golden beets so I have no idea what they taste like, sorry! But maybe just give it a try!?

Erin - It really was! But I admit that I was a little suspicious at first, too because this is the first time I tried the ricotta and didn't know if the cheezy-garlic taste would fit. Luckily I tried it because it was wonderful!
mad about udon - it took me a while to finally make it, but i'm glad i did because it served well in last nights lasagna aswell =)
Alice - To be honest the only things I make with beets are: eating them plain, adding them to salads or sandwiches and cooking borscht ;)
