Red Lentils with Cauliflower

I couldn't decide what to make for dinner last night so I just started cooking some cauliflower and then settled for red lentils to go with it. Another delicious and nutritious meal. Mhmmm! Lentils are so good and I can't believe I waited until now to make them, because they had been sitting in my cupboard for at least a month now. But hey, I think they won't be around for too long since I'm already thinking about how to use them next.



Cauliflower florets with nutmeg & salt and 1/2 cup red lentils with a tsp. vegetable broth, salt, pepper, some paprika powder and nutmeg, a small sauteed onion, a dash of garlic powder, tumeric and cumin.

What a simple and delicious sounding meal. I too really like red lentils, and cauliflower as well, I'd have happily sat down and chowed on this with you!

Lentils are one of my staples, and every Tuesday I have a thick lentil soup. They are warming and give plenty of energy. Paprika and nutmeg are the perfect spices for them.

Jennifer - It's a pity we don't live close to each other. I want to have potlucks with my favorite bloggers *sigh* How awesome would that be? Cooking with another vegan! I feel so alone here =p

Romina - I had been wanting to make that ever since I saw pics of it on someones blog, but since I don't own V-con I came up with this and it was soooo satisfying =)

Cookiemouse - I used to have lentil soup at least once a week, too when I was little! It's so comforting!
In the beginning I wasn't sure which spices to use, but then I checked a few red lentil recipes and knew what would work ;)

I just had Dal last night and was thinking... I need to find another indian dish that has cauliflower...and here it is! I never thought to put the two together but now I know what to do with the leftover Dal! YUM.

p.s. cant wait to hear about how your friend likes the carrot cakes!
