Birthday Baking!

My best friend turns 20 in four days and I want to spoil him with baked goods.
He's a peanut butter lover BIG TIME and here's what I've planned to make for him so far:

- No Bake Black Bottom Peanut Butter Silk Pie (VwaV)
- Peanut Butter Chocolate Chip Swirl Cookies (I'll veganize an old recipe I used once which he loved)
- Peanut Butter Chocolate Chip Cake
- Peanut Butter & Jelly Cupcakes

Now what I'm asking you to do is: post your favorite recipe that includes peanut butter. I want him to squeal like a little girl when he sees the baked goods =p

I'd love you forever and ever if you helped me out with this. I just need more ideas and reviews (especially on the No Bake Pie... is it good?), because these goods will represent veganism (there will be omnis only) and under no circumstances do I want people to be able to say "See, I told you vegan food tastes like crap!". I think you know what I mean ;)

Woah, you are planning to make MORE than all the foods you listed?! Even if you only made ONE of the foods you listed, I think he would squeal with delight!!!

I am very easy-to-please when it comes to peanut butter desserts-- as long as it has peanut butter in it, I am going to like it! Oh, and anything with peanut butter AND banana AND chocolate REALLY rocks my world!

Speaking of pie, I seem to remember the Pleasantly Plump vegan posting a recipe for a peanut butter pie like a week back, so maybe check that out.

I'm excited to see all the yummy foods you make!!!

oh my goodness, that'll be peanut heaven, that is one LUCKY guy! I unfortunately haven't done a lot of peanut butter baking recently (aah, I should do that!), so I can't recommend anything personally, but there's always these PB cinnamon rolls from the Bjorked Off blog --

the ppk and the blogs went mad for them and they're definitely on my To-Make list!

Oh, and as for chapati, they're sooooo easy it's almost criminal. I make enough for two at one time, so that's about...

1/2 cup of whole wheat flour
2 tbsp of white flour
1/4 tsp salt
drizzle of olive oil
1/4 cup (or more) warm water

you just mix together the dry ingredients, then stir in the water with your hand until a dough forms and then knead it for about 5 minutes, or until it's soft and springy. The trick is to make sure it's on the wet side, that way a pocket will form when you cook it. And to cook it, heat up a heavy bottom skillet over medium-high heat, then roll out one half of the dough (or both, if you want two), and cook it dry. The neat thing is if it starts to bubble up with a big air pocket in the middle - that's how you know you've made real pita! I find pressing ever so gently with a spatula/spoon on the air bubbles makes them grow. And then you basically just cook it until it's lightly browned on both sides.

Whew! that was a mouthful. But they're so fun, you should try it!

Oh, and I forgot to mention that if you let the dough rest (covered) for 20 minutes between kneading and rolling it out, it's a LOT easier to roll. :)

oh my goodness, your friend is SO lucky that you're baking all that for him!! my birthday is coming up in the beginning of april - care to bake for me too!?!??! hahaha ;0)

I recommend the peanut butter bomb cookies that I just posted about, a few days ago - they're HEAVENLY.

Katie - Ha ha, no no! I just want to make sure he gets cookies, cupcakes, a cake and a torte (creamy filling)!

I think I'll have to include bananas somewhere... maybe on top of the cupcakes... ahhh so many decisions =p

Actually I made her regular rolls, but had been eyeing the pb recipe too! The regular ones already were a huge success so I guess I'll have no choice but try the pb version =D

Anyways. I do really like that silk pie. Smlove pie from veganomicon is even better, though the only peanut butter is in the ridiculously awesome pb-caramel topping.
But they're both really insanely good.

Oh, he is definitely going to have the best birthday EVER! Be sure to take pics of all the things you'll bake him, so we can at least enjoy looking at all the yummy stuff, haha ;)
